Here is a recipe for enchilada sauce which is not easy to find here in Turkey. It’s very easy and quick to make and tastes lovely.
¼ cup vegetable oil
2 tbsp flour
¼ cup chilli powder
8-10 ounces tomato puree
1 ½ cups water or stock
¼ tsp cumin
¼ tsp garlic powder
¼ tsp salt
Heat oil in a pan and stir in the flour and chilli powder.
Reduce the heat and cook until lightly brown, stirring constantly.
Gradually stir in all other ingredients and cook for 10 minutes.
You can also add ¼ tsp oregano for a twist.
